Ever realize you have too much of a produce item you’re never going to finish before it goes bad? This happened last week. I had purchased a box of grape tomatoes to use on salads. However, Mr. E and I were leaving towards the end of the week to attend a friend’s wedding in Florida, and I knew they’d be in poor shape by the time we’d get home. Happy Cinco De Mayo! How will you celebrate a day that, according to Mr. E and his 50% Mexican heritage, Mexicans don’t really celebrate (according to him, it’s like celebrating 4th of July on March 3rd)? If the plan is to eat chips with guac and chase it with a margarita for Date Night, you and your significant other may want to rethink your plans to include some more substantial foods into your celebration plans. Meatless Meatballs

I am told by my husband that I make some killer meatballs. However, I can’t confirm this myself.  You see, I stopped eating red meat and pork when I was about 13 years old because I just didn’t like it.  For the most part my Italian family was fine with this decision except for one thing- my not eating meat also included no longer eating meatballs.
