In honor of this recipe getting a recent feature on Prevention, I decided to give the photography a little makeover. Enjoy!

Mr E and I went on a recent winter getaway to Hawaii.  And of course every meal in the weeks following involved seafood and some tropical theme.  So when I went to my local grocery store and saw habanero peppers and a large bin of pineapples, I knew a Pineapple Habanero sauce would be born. Today is the official debut of Mr E’s Cocktail Corner, a new series on Nutrition Nuptials written by none other than Mr E himself! All photography is proudly his own. As a dietitian, I believe all foods can fit into a health lifestyle. And yes, that includes cocktails. Without further ado, I present to you Mr E!

Meet Mr E!

For those of you who have been reading Mandy’s blog for a while, you may know me as Mr. E.  You may even remember me from such hilarious blog posts as The Mashed Cauliflower Incident, my dislike of Old El Paso products, or one of the Date Night-inspired versions.  Aside from being our protagonist’s adventurous partner in crime, I’m a corporate athlete with a passion for delicious food, sunsets, great live music, sunrises, fun friends, fitness, tasty drinks, and taking pictures of all the aforementioned!  I have been known to combine any and all of those things. Sometimes that means experimenting making cocktails with a twist and posting pictures to Instagram. Continue reading “Jalapeño Margarita”

very berry tiny trifles

Recipe: Very Berry Tiny Trifles

When we go out to dinner, Mr E makes it known ahead of time if dessert will be happening. I like this because I can plan my meal accordingly (Split an appetizer? Skip the appetizer? Salad-tizer? Lighter entree?). We very rarely have dessert at home when it’s just the two of us. But having company over is a different story. Rather than making a huge cake or pie that everyone is too full to eat (and stuck with a TON of leftovers!), I’ve been totally jamming on making mini desserts. So when The Recipe Redux announced this month’s theme would be mini morsel desserts, I was thrilled to share one of my small treats.  Continue reading “Recipe: Very Berry Tiny Trifles”

Wedding season is officially upon us. And anyone who is part of it knows that it’s never just about the wedding. There’s the events leading up to the wedding, including bridal showers If you’re one of the thousands of couples getting married this summer, then I’m sure at least one of you have spent hours stressing over items to put on your registry. Researching which pepper grinder is right for you. Making sure you both agree on that china pattern – or maybe china isn’t even on your radar.  When you’re a shower guest, you want to make sure the gift you’re giving will not only make a splash with “oohs and ahhhs” as the bride holds up each item, but want to make sure it’s something that actually gets used. Or at least put prominently on display. That’s where my annual Nutrition Nuptials Registry Recommendation comes into play!

I received free samples of Sabra Hummus mentioned in this post. By posting this recipe I am entering a recipe contest sponsored by Sabra and am eligible to win prizes associated with the contest. I was not compensated for my time.

Happy National Hummus Day! You’re just in time to celebrate.  If you’ve noticed your social media flooded with #NationalHummusDay tags, that’s because today, May 13, 2017, is the big day. And what better way to celebrate then with these Hummus Empanadas, which I am calling “Humpanadas”.

Let’s celebrate #TacoTuesday with a #MeatlessMonday theme on this #WellnessWednesday.  Today I’m unveiling my first official entry for The Recipe ReDux, a monthly recipe contest founded by fellow dietitians.  I’m stoked that the first contest is something already in steady dinnertime rotation: tacos!  Continue reading “Sunflower Tacos in Collard Leaves”

Southwestern Yellowfin Tuna Salad

I recently wound up with an extra tuna steak, and rather than sear and serve it over salad like I did the night before (oh, the horrors!), I decided to take a different approach: make tuna salad. But this is not your mom’s mayo and celery-loaded school lunch creation. THIS is a spicy adult take on tuna salad.  Continue reading “Southwestern Yellowfin Tuna Salad”

Thank you all for the positive response to the 2016 Wedding Registry Recommendations provided by my Registered Dietitian Nutritionist (RDN) colleagues. While I hope you enjoyed the recommendations and maybe have a few new items on your wish list, I’m sorry to say that not all registry items are going to be stars in your home. Like a promising college athlete recruited in the NFL draft and fizzles in the pros, there are a few registry items that just don’t make the All-Star Kitchen Team, causing us to have some registry remorse.  Continue reading “Registry Remorse”
