In honor of this recipe getting a recent feature on Prevention, I decided to give the photography a little makeover. Enjoy!

Mr E and I went on a recent winter getaway to Hawaii.  And of course every meal in the weeks following involved seafood and some tropical theme.  So when I went to my local grocery store and saw habanero peppers and a large bin of pineapples, I knew a Pineapple Habanero sauce would be born. Happy National Hummus Day! You’re just in time to celebrate.  If you’ve noticed your social media flooded with #NationalHummusDay tags, that’s because today, May 13, 2017, is the big day. And what better way to celebrate then with these Hummus Empanadas, which I am calling “Humpanadas”.

There’s snow outside my house right now and that means two things.  1) I’m officially in summer withdrawal and, 2) I miss enjoying fresh produce from my local farm market. In the winters I pretend I’m on a warm tropical island by enjoying frosty, fruity smoothies. Blueberries are the NJ state fruit, but I won’t be seeing a fresh Jersey berry till July.  Which is why I’m so excited to have discovered frozen Wild Blueberries! Today we’re talking about one of the most misunderstood vegetables at the market.  The one everyone associates as a “bad” food.  The guy everyone shames in favor of their supposedly superior orange cousin.  That’s right – today I’m going to be setting the record straight on the POTATO.

The other day I posted a Super Bowl Round-up of snack swaps, and while those salty, spicy, and savory tastebuds were satisfied, sweet was definitely lacking.  As someone with a sweet tooth, I felt this area needs to be fairly represented at any event.  And therein lies the inspiration for my latest recipe: Apple Chip Nachos with Peanut Butter Caramel Sauce. What’s in Your Cooler?

Facebooktwitterpinterestyoutubeinstagram

Mr. E and I are avid beachgoers, which is one of the reasons we chose to live within walking distance to the beach. And while our boardwalk offers some food options, most are either fried or high fat foods. Not to mention the long lines and cost – almost $4 for a slice of pizza is insane! Don’t let the hard work you did all winter be compromised by the foods you eat while wearing your bathing suit. It’s time to invest and a cooler and pack it with beach-friendly treats! Last week I was attending an intensive yoga teacher training. The days were long and they were working us hard, so at any given opportunity we were refueling.  I always pack an endless supply of snacks whenever attending these long days because breaks are short, but my hunger level is super-high!  Making a batch of these Energy Blasts was a lifesaver in the afternoon when there were still many more hours left in the day and more handstands to be mastered.  Continue reading “Recipe: Energy Blasts”

Tiny Tomato-tizers

Ever realize you have too much of a produce item you’re never going to finish before it goes bad? This happened last week. I had purchased a box of grape tomatoes to use on salads. However, Mr. E and I were leaving towards the end of the week to attend a friend’s wedding in Florida, and I knew they’d be in poor shape by the time we’d get home. So, I did what any other creative person would do- I turned them into an appetizer to enjoy before dinner. And they were met with positive reviews by Mr E. Continue reading “Tiny Tomato-tizers”
