Mr E and I have a lot of meal-time traditions we’ve established for ourselves over the years: ice cream date on Sunday nights in the summer, wine & cheese Fridays, Slow Cooker Snow Days, and my favorite weekend tradition: BRUNCH! Spring is in the air, and that means wedding season is upon us. One of my favorite food marriages is the pairing of fruits and veggies together in the same dish. If you’re looking to change up your usual salad, try this Springtime Sweet & Tangy Salad for a quickie swap.
For the month of February, I was strongly encouraged to follow a vegan diet in view of a yoga training I was doing. At first I didn’t think it would phase me too much, as I love fruits, veggies, and whole grains. But as the days went on, my creativity also had to become ignigted otherwise boredom would set in quickly. Lunch was one of the more challenging meals for me, as my typical lunch is a sandwich, salad, or yogurt parfait. So while working from home one day, I got some inspiration to try something new.
